Quench your Cookie Cravings

Serves 16.

When I have days off doing nothing and being at home all day, I love to make food believe it or not. This is a classic quick and easy recipe that is better than any home made cookies I've ever had. It's my own mix up of Bill Grangers cookie recipe. Please try and please enjoy, you will not be disappointed!

125g unsalted butter, softened

1 1/4 cups brown sugar

1 teaspoon of vanilla essence

1 egg, lightly beaten

1 1/2 cups wholemeal flour

1/2 teaspoon of baking powder

pinch of salt

1 1/2 cups of chocolate bits

Preheat the oven to 180 degrees. Beat butter and sugar in a bowl until the colour turns light and creamy tone. This might take a while to get to. Add vanilla, and egg and stir with a plastic spatula to combine. Stir flour, baking powder and salt until just combined. Fold through chocolate bits with plastic spatula.

Using a spoon, scoop up cookie dough into round balls and place in rows on greased and lined baking tray, allowing room for the cookie to spread. Cook for 17 minutes, until they turn golden.
